what is the best way to deal with datetime fields going from Salesforce into SQL Server?

The best way is to set the data types on the profile fields to "Date" and setup the correct mask. The map will then handle the conversion automatically.
If you happen to run into an issue where there is a text field holding a date in SFDC, and it maps to a "date/time" field in SQL, then you'll need to use a Date Format map function. You would set the source mask to match the SFDC date, then the output would be the internal "Boomi" date format, yyyyMMdd HHmmss.SSS.
