Just map your EDI profile to some XML( We could also achieve by mapping same EDI profile to same EDI profile, but I am not sure, so, I am suggesting to map your EDI to XML).
Then, use the data process shape with custom scripting and we have to set only one property to count the number of records. he default script will count the number of records but we just need to include one more property. Ideally it is a dynamic process property to use there.

If you can parse the incoming EDI document you can count the number of lines that are coming up by making use of Groovy scripting.
I would endorse map shape only when the EDI is complex or custom, and make use of count function to identify the record count.
