Is there a way to deploy a previous version of a process? We do not always want to deploy the latest version of the process. Also are there any SCM process documents for how Best Practices for deployment for AtomSphere?

In order to better answer your question, would you please provide some more details, or perhaps a use case scanrio in which you need to deploy a process that is not the latest version.

Sure... my company works with 3rd party logistics companies. Occasionally they will have updates to their platforms and we will need to accomodate that. We will begin development on those changes and send to our QA environment for them to validate. Our processes have common components that are shared. While QA is testing we may begin further development of the shared compoment for another partner. This subsequent development might be scheduled to go a month or more later.
The second modification will be sent to QA prior to the production deployment of the first modification.
When there is only a single deployment to QA for the second mod it's not that big of an issue, but once we go past the 10 deployments that are visible for an environment it does become an issue. Why we would need more than 10 deployments is a reasonable question but still the problem remains.
