Need to set a parameter to a date field from sql to then use in a filter expression in the operation to salesforce (so that I get only modified records since last modified date), how??

This doesn't appear possible if the start shape is the operation out to Salesforce. Even putting in a dummy startshape it is not intuitive how to populate a paramter from a sql call to then use as in the filter expression.

Correct, the SQL Lookup parameter type is not available in the start step, however if you use a No Data start step and then a connector step for your Salesforce call you should have the SQL Lookup option listed as one of the available parameter types. I'm referring to the Parameters tab on the Connector step itself that is displayed once you choose an Operation.
If your SQL query/script is returning a date value that will be passed into the SFDC connector filter, don't forget your SQL script will need to reformat that value in the date format required by SFDC...

Perhaps I didn't fully understand the question, but why don't you perform your SQL Operation first and then set the parameter in the Salesforce Connector to the profile element from the pervious SQL shape?
In such a design, I'd suggest starting with a No Date, then a Branch. On the first branch, put the SQL connection and then set a Process Property with the date. On the second branch, retrieve the Process Property as the parameter for your SOQL Query (rather than trying to put one Connector right after the other which I find can be problematic).
