Salesforce connector vs Web Services server

I just want to understand the difference between using a salesforce connector vs Web Services server as a starting component of a process. I understand the difference between the 2 at a high level, but want to understand the way it works. I have 2 options which I have described below and please help to explain which one is better and why

Option 1: I can use a salesforce connector to get the data and then schedule the process in Dell Boomi to put the data in another external system

Option 2: I can have a web services server and then invoke it from salesforce by having a cron job scheduled in salesforce to run the process

Please help to understand which one is efficient and why? Thanks
