We can extract the element values from document in the document cache by using index by finding profile elements linked to keys.

Multiple indices allow you to essentially do lookups against the same cached data with different criteria. Maybe you want to cache a list of payment method types and in one context you want to query the cache by internal ID and in another context you want to query by payment method name. You can use a single doc cache with two different indices.
Similarly multiple keys allow you to configure a unique "combination" key comprised of several fields without you having to modify your data before caching to concatenate the key value.
